Gluten-Free Bourbon Snickerdoodle Blondies
Hello everyone! Gabriel and I threw our first Galley Kitchen Throwdown dinner about two weeks ago. If you’ve been following along this blog, or are part of our circle, you probably already know what I’m talking about. We would say the first dinner was a success. It was everything we had hoped for and more. The whole process included lots of coffee shop meetings where we planned the menu, developed the payment method, and designed media platforms. It was a tremendous learning experience, and there was definitely a learning curve for both of us. In the end, everything came together nicely. We did what we intended to do. People gathered, we made food, and people not only ate it, but they enjoyed it. It was such a pleasure cooking for an adventurous crowd and seeing all of our friends enjoying the fruits of our labor. As a result of a successful first event, and an eagerness for recipes to the food we made, I thought it would be fun to incorporate GKT dishes in the form of recipes on this platform!
Now, on to the recipe! Today I am sharing a Gluten-Free Bourbon Snickerdoodle Blondie. Every time I say it out loud, I have to stop and think about the title, because it is a long one. These blondies are probably the most addictive dessert I have ever made. That’s a loaded statement, but seriously, this is the kind of dessert that you keep going back for another little sliver and eventually half the dessert is gone…..because you ate it.
What makes this dessert so good is the flavor of snickerdoodle and bourbon combined. The bourbon cuts through the sweetness and adds a surprise punch, and who doesn't like alcohol in their desserts!? The snickerdoodle part adds a balance of tart, sweet, and warming flavors. These blondies are everything you want in dessert (even if they lack chocolate).
Top them off with sugar and cinnamon to add the perfect sparkle with that cravable crust everyone loves. So what are you waiting for?? Go and make these blondies. You won’t regret it.
Gluten-Free Bourbon Snickerdoodle Blondies
ingredients:
- 1 cup salted butter, melted and cooled slightly
- 2 cups organic cane sugar
- 2 eggs, room temperature
- 4 tablespoons bourbon whiskey
- 2 1/2 cups gluten-free baking flour (I use Bob’s Red Mill Gluten-Free 1:1 baking flour)
- 1 1/2 teaspoons cream of tartar
- 1/2 teaspoon salt
- 2 tablespoons organic cane sugar
- 2 teaspoons cinnamon

How to cook Gluten-Free Bourbon Snickerdoodle Blondies
- Preheat oven to 350°F. Grease and line a 9x13" baking pan with parchment paper and set aside.
- In a standing mixer with a paddle attachment, cream the melted butter and sugar on high speed for 30 seconds.
- Add in the egg and bourbon and mix for another 30 seconds.
- In a separate bowl, combine gluten-free flour, cream of tartar, and salt. Fold dry ingredients into the wet ingredients and mix until combined.
- Place into prepared baking pan.
- Mix together additional sugar and cinnamon and sprinkle over bars.
- Bake for 30-35 minutes, until a knife in the center comes out mostly clean, then allow to cool completely before cutting into squares.
